Strawberry Cake

Fresh Strawberry Cake

  • Cake
  • Duncan Hines White Cake Mix
  • ½ C. Canola Oil
  • 3 oz. Strawberry Jell-o
  • ½ C. Water
  • 4 Eggs or substitute
  • 16 oz. Fresh Strawberries
  • Frosting
  • 1 stick Butter, softened
  • ½ of 16 oz. Strawberries, cut up
  • Powdered Sugar, starting with 1 lb. and adding to right consistency, about 1 ½ lb
  1. Cake
  2. Clean and cut up fresh Strawberries and divide in half for Cake and Icing.
  3. Into mixing bowl put Cake Mix, Jell-o, Eggs, Oil and water.
  4. Mix on low speed of mixer for 30 seconds.
  5. Add ½ of Strawberries and mix on high (or cake setting) for 2 minutes.
  6. Spray 13 x 9 inch pan with Pam.
  7. Pour batter into pan and bake at 350 degrees for 30 minutes or until toothpick inserted into center of Cake comes out clean.
  8. Cool, and then frost with Icing below.
  9. Frosting
  10. Combine frosting ingredients in mixing bowl and beat on high (or frosting setting), adding Powdered Sugar until frosting consistency.
  11. I add a little Vanilla.
  12. Beat well and frost cake liberally.
  13. Refrigerate until serving and refrigerate leftovers.
