The world famous ribs from Duke's on Waikiki
  • 4 to 5 Lbs Pork Back Ribs (20 Ribs) or Spare Ribs
  • 5 Bay Leaves
  • 1½ Tsp Cracked Peppercorns
  • 1½ Tsp Hickory Liquid Smoke
  • 1½ Tsp Kosher Salt
  • 1 C Water
  • Duke's Mango Barbecue Sauce
  1. Preheat oven to 375 degrees
  2. Place ribs in a roasting pan
  3. Combine bay leaves, peppercorns, liquid smoke, salt and water
  4. Pour over ribs
  5. Cover tightly with foil
  6. Bake in oven for 45 minutes
  7. Remove ribs from roasting pan and place on broiler pan
  8. Baste frequently with sauce
  9. Broil ribs in oven 6 inches from burner until browned on both sides
