Duke's Ribs

The world famous ribs from Duke's on Waikiki
Ingredients
- 4 to 5 Lbs Pork Back Ribs (20 Ribs) or Spare Ribs
- 5 Bay Leaves
- 1½ Tsp Cracked Peppercorns
- 1½ Tsp Hickory Liquid Smoke
- 1½ Tsp Kosher Salt
- 1 C Water
- Duke's Mango Barbecue Sauce
Instructions
- Preheat oven to 375 degrees
- Place ribs in a roasting pan
- Combine bay leaves, peppercorns, liquid smoke, salt and water
- Pour over ribs
- Cover tightly with foil
- Bake in oven for 45 minutes
- Remove ribs from roasting pan and place on broiler pan
- Baste frequently with sauce
- Broil ribs in oven 6 inches from burner until browned on both sides
