Strawberry Vinaigrette

David, Amanda and Malory Underwood have been making Strawberry Salads for some of the events we have been doing. They have been a huge hit. This is the dressing.
Ingredients
- 1½ Cups of Strawberries
- ⅓ Cup Olive Oil
- ⅓ Cup Balsamic Vinegar
- 1 Tbs Honey
- 1 Tbs Yellow Mustard
- ½ Tsp Kosher Salt
- ½ Tsp Coarse Ground Black Pepper
Instructions
- Hull and quarter strawberries
- Add strawberries, olive oil, balsamic vinegar, honey, mustard, salt and pepper to a food processor.
- Process for 1-2 minutes, until smooth.
Notes
1 recipe for 1-1.5 packages of spring mix
2 recipes for 3 packages of spring mix
3 packages of spring mix for (1) 6" full size pan or (2) 2.5" full size pans
