This is the recipe Underwoods make for many church outings. Always a hit!
Ingredients
  • 32 oz Mexican Shredded Cheese
  • 3 Eggs
  • 2 Cups Heavy Whipping Cream
  • 1 Stick of Butter
  • 1 Lb Macaroni
  • Kosher Salt
  • Pepper
  • BBQ Rub
Instructions
  1. Preheat smoker/oven to 325 degrees
  2. Prepare pasta according to instructions on package
  3. Place cheese in large bowl
  4. In separate bowl, mix the eggs with the heavy whipping cream
  5. Spray pan thoroughly
  6. Slice the sticks of butter into pats
  7. Add half the pats of butter to the bottom of pan
  8. Add half the macaroni
  9. Layer half of the cheese on top of the macaroni
  10. Liberally salt and pepper on top of the layer
  11. Dust the layer with BBQ rub
  12. Add the rest of the macaroni
  13. Top with the remainder of the cheese
  14. Add the remaining half of the pats of butter to the top of the cheese
  15. Dust the top with BBQ rub
  16. Pour the egg and heavy whipping cream mixture over the layered dish until the pan is half full, no more.
  17. Bake for 45 minutes
  18. Rotate
  19. Bake for additional 45 minutes or until the liquid is gone and the macaroni browns on top

64 oz Mexican Shredded Cheese
6Eggs
4 Cups Heavy Whipping Cream
2 Sticks of Butter
2 Lb Macaroni
Kosher Salt
Pepper
BBQ Rub

3x - Extra Deep Large Pan
96 oz Mexican Shredded Cheese - (1) 5 Lb Bag
9 Eggs - ½ Carton of Egg Beaters
6 Cups Heavy Whipping Cream - 1½ Cartons
3 Sticks of Butter
3 Lb Macaroni
Kosher Salt
Pepper
BBQ Rub
