Rhubarb Coffee Cake

This was one of my favorites growing up. Jack and Ernie were a second set of parents to me. Jack grew rhubarb in his garden and Ernie would make me coffee cake with it. Every time I make it, it takes me back to those days.
Ingredients
- 2 C. Flour
- ½ tsp. Salt
- 1½ c. Brown Sugar
- ½ tsp. Soda
- ½ c. Butter
- 1½ tsp. Vanilla
- 1 Egg
- 1½ c. Rhubarb, cut-up
- 1 c. Buttermilk
- (1 c. Brown Sugar + 1 tsp. Cinnamon)
Instructions
- Cream Sugar and Butter.
- Add Egg.
- Alternately add sifted dry ingredients with Buttermilk and Vanilla.
- Stir in Rhubarb.
- Sprinkle on top 1 c. Brown Sugar with 1 tsp. Cinnamon.
- Bake 40 min. at 350 F in 13x9 in. pan or two round pans.
