Ingredients
  • 1½ cups creamy peanut butter (Jif)
  • 1 cup real butter, softened
  • 1 teaspoon vanilla extract
  • 5 cups confectioners' sugar
  • 6 oz of any kind of baking chocolate brick, chips etc to melt (I just add however many bricks and melt them and add as I need more)
  • Wooden tooth picks
Instructions
  1. Line a baking sheet (or 2 or 3) with waxed paper; set aside.
  2. In a medium bowl, mix with mixer, peanut butter, butter, vanilla, and confectioners' sugar to form a smooth stiff dough.
  3. Shape into balls using 2 teaspoons of dough for each ball or whatever size you prefer.
  4. Place on prepared pan, and refrigerate or freeze with the tooth picks in it so they stay pretty tight.
  5. Melt chocolate in a glass bowl or a double boiler. I use the microwave. Stirring occasionally until smooth and lump free.
  6. Remove balls from refrigerator or freezer and dip into melted chocolate.
  7. Return to wax paper, chocolate side down, and remove toothpick.
  8. Repeat with remaining balls.
  9. Refrigerate 30 mins or place them back in the freezer for 10 mins or so until the chocolate is hardened.
