Buckeye Balls

A holiday favorite
Ingredients
- 1½ cups creamy peanut butter (Jif)
- 1 cup real butter, softened
- 1 teaspoon vanilla extract
- 5 cups confectioners' sugar
- 6 oz of any kind of baking chocolate brick, chips etc to melt (I just add however many bricks and melt them and add as I need more)
- Wooden tooth picks
Instructions
- Line a baking sheet (or 2 or 3) with waxed paper; set aside.
- In a medium bowl, mix with mixer, peanut butter, butter, vanilla, and confectioners' sugar to form a smooth stiff dough.
- Shape into balls using 2 teaspoons of dough for each ball or whatever size you prefer.
- Place on prepared pan, and refrigerate or freeze with the tooth picks in it so they stay pretty tight.
- Melt chocolate in a glass bowl or a double boiler. I use the microwave. Stirring occasionally until smooth and lump free.
- Remove balls from refrigerator or freezer and dip into melted chocolate.
- Return to wax paper, chocolate side down, and remove toothpick.
- Repeat with remaining balls.
- Refrigerate 30 mins or place them back in the freezer for 10 mins or so until the chocolate is hardened.
