Broccoli Rice Casserole

This was always one of my favorite side dishes. In all honesty, I usually ended up eating more of it than the main dish. Even non-broccoli fans will like this one.
Ingredients
- ½ Sm. Onion, chopped
- 4 T. Butter
- 20 oz. Broccoli Florets
- 2 cans Healthy Request Cream of Chicken Soup
- 1 C. Milk, Skim
- 1 C. Cheese Whiz, light
- 5 or more slices American Cheese
- 2 C. uncooked Minute Rice prepared with 2 C. Water, Salt, and Butter
Instructions
- Cook Onion in Butter,
- Add Broccoli and cook a little longer.
- Add 2 cans of Soup
- Simmer for 10 – 15 min.
- Add Milk, Cheese Whiz and American Cheese.
- Bring to a boil
- Add prepared Rice.
- Stir to combine.
