Lime Cheese Cake

This is one of my favorites. My Grandmother used to make it all the time when I was growing up. It is very simple, but very good. I would probably get sick, but I can probably eat the entire thing myself.
Ingredients
- 1 ½ pkg. Graham Crackers, crushed
- 1 stick Butter, Melted
- 1 pkg. Lime Jell-O
- 1 tsp. Lemon Juice
- 1 C. Boiling Water
- 1 each 8 oz. and 3 oz. Light Cream Cheese, softened
- 1 C. Sugar
- 1 lg. can Evaporated Milk, chilled
- 1 tsp. Vanilla
Instructions
- Mix together Graham Cracker Crumbs and melted Butter.
- Reserve a small amount of mixture for topping.
- Press Graham Cracker mixture in bottom of 13 x 9 inch dish sprayed with Pam.
- Dissolve Jell-O in boiling water and add Lemon Juice, mixing well.
- Cool Jell-O mixture in refrigerator until syrupy.
- In mixing bowl, beat Cream Cheese and Sugar until well blended.
- Beat in syrupy Jell-O.
- In separate mixing bowl, beat chilled Evaporated Milk until whipped.
- Add Vanilla.
- Add Evaporated Milk mixture to Cheese mixture, beating well.
- Pour over crumb crust.
- Sprinkle reserved crumbs on top.
- Chill for 2 – 3 hours.
- Refrigerate leftovers (If there are any).
