Date Nut Pinwheel Cookies

These are one of my favorite cookies
Ingredients
- Filling
- 2 ¼ C Chopped Dates
- 1 C Sugar
- 1 C Water
- 1 C Chopped Nuts
- Dough
- 1 C Shortening
- 2 C Brown Sugar
- 3 Eggs, well beaten
- 4 C Flour
- ½ tsp Salt
- ½ tsp Baking Soda
Instructions
- Combine Dates, Sugar and Water in pan,
- Cook until thick – app. 10 min.
- Add Nuts and cool.
- Cream Shortening and add Brown Sugar gradually continuing to cream.
- Add beaten eggs and beat well.
- Sift Flour, Salt and Baking Soda and add to remaining ingredients, mixing well.
- Chill thoroughly.
- Divide into two equal parts rolling into rectangle.
- Spread with Date Filling
- Roll up jelly roll style.
- Chill overnight.
- Cut with sharp knife into ½ inch slices.
- Bake at 400 F for about 10 – 12 minutes.
