These are one of my favorite cookies
Ingredients
  • Filling
  • 2 ¼ C Chopped Dates
  • 1 C Sugar
  • 1 C Water
  • 1 C Chopped Nuts
  • Dough
  • 1 C Shortening
  • 2 C Brown Sugar
  • 3 Eggs, well beaten
  • 4 C Flour
  • ½ tsp Salt
  • ½ tsp Baking Soda
Instructions
  1. Combine Dates, Sugar and Water in pan,
  2. Cook until thick – app. 10 min.
  3. Add Nuts and cool.
  4. Cream Shortening and add Brown Sugar gradually continuing to cream.
  5. Add beaten eggs and beat well.
  6. Sift Flour, Salt and Baking Soda and add to remaining ingredients, mixing well.
  7. Chill thoroughly.
  8. Divide into two equal parts rolling into rectangle.
  9. Spread with Date Filling
  10. Roll up jelly roll style.
  11. Chill overnight.
  12. Cut with sharp knife into ½ inch slices.
  13. Bake at 400 F for about 10 – 12 minutes.
