Lisa's Sweet Potatoes

Lisa's sweet potato casserole has become a Thanksgiving staple at our house. It is practically a dessert.
Ingredients
- 40 Oz Recipe
- Casserole
- 40 Oz Can Bruces Yams
- ½ Cup Light Brown Sugar
- ⅓ Cup Butter Melted
- 1 Tsp Vanilla
- ½ Tsp Kosher Salt
- Topping
- 1 Cup Marshmallows
- 1 Cup Light Brown Sugar
- ⅔ Cup Flour
- ⅔ Cup Butter Melted
- 110 Oz Recipe
- Casserole
- 110 Oz Can Bruce's Yams
- 1½ Cups Brown Sugar
- 1 Cup Butter
- 3 Tsp Vanilla
- 1½ Tsp Kosher Salt
- Topping
- 3 Cups Marshmallows
- 3 Cups Light Brown Sugar
- 2 Cups Flour
- 2 Cups Butter Melted
Instructions
- Casserole
- Pre-heat oven to 350 degrees
- Drain yams
- Mash yams in a large mixing bowl
- Add in brown sugar, melted butter, vanilla and kosher salt
- Mix until smooth
- Spray pan with Pam
- Topping
- In a mixing bowl, combine light brown sugar, flour and melted butter
- Apply toppings evenly over casserole
- Bake in oven for 30 to 40 minutes
- After removing from the oven, evenly layer marshmallows over the top of the casserole, allowing the internal temperature to melt the marshmallows
- Just before time to serve, place in oven under the broiler set to low, to lightly brown the marshmallows
- Watch carefully as it will only take about 30 seconds.
