Stephen's Mashed Potatoes

Stephen's mashed potatoes are a must have for our family gatherings!
Ingredients
- 5 Lb Bag of Potatoes
- 1 Lb Salted Butter (8 half sticks)
- 1 8 Oz Pkg of Cream Cheese, softened
- 1 Pint Heavy Whipping Cream
- Kosher Salt
- White Pepper
Instructions
- Boil potatoes in salted water until fork tender
- Mash potatoes in mixing bowl using masher or press through a ricer
- Attach mixing bowl to stand mixer and start mixing on low
- Cut cream cheese into 8 equal chunks
- Drop cream cheese chunks into mixer one at a time
- Cut 3 sticks/6 half-sticks of butter into slices
- Drop butter slices into mixer one at a time
- Add remaining butter if needed
- Add heavy whipping cream as needed to reach required consistency
- Add salt and white pepper to taste
