Stephen's mashed potatoes are a must have for our family gatherings!
  • 5 Lb Bag of Potatoes
  • 1 Lb Salted Butter (8 half sticks)
  • 1 8 Oz Pkg of Cream Cheese, softened
  • 1 Pint Heavy Whipping Cream
  • Kosher Salt
  • White Pepper
  1. Boil potatoes in salted water until fork tender
  2. Mash potatoes in mixing bowl using masher or press through a ricer
  3. Attach mixing bowl to stand mixer and start mixing on low
  4. Cut cream cheese into 8 equal chunks
  5. Drop cream cheese chunks into mixer one at a time
  6. Cut 3 sticks/6 half-sticks of butter into slices
  7. Drop butter slices into mixer one at a time
  8. Add remaining butter if needed
  9. Add heavy whipping cream as needed to reach required consistency
  10. Add salt and white pepper to taste
