These cookies are an Almond family tradition each year at Christmas time.
Ingredients
  • 6 eggs
  • 3½ Cups Flour
  • 1½ Cups Sugar
  • 1 Cup Margarine (1/2 lb) melted and cooled
  • 4 Teaspoons Baking Powder
  • 1 Tablespoon Vanilla
  • Anise Seed
  • ½ Lemon Rind and juice
Instructions
  1. Beat eggs
  2. Gradually add sugar
  3. Beat eggs until smooth (2 eggs at a time) with sugar
  4. Pour cooled melted margarine and vanilla
  5. Add flour and baking powder to egg mixture
  6. Dough will be sticky when done
  7. Preheat pizzelle iron
  8. Drop ½ to 1 teaspoon of dough on pizzelle iron to bake
