Pizzelles

These cookies are an Almond family tradition each year at Christmas time.
Ingredients
- 6 eggs
- 3½ Cups Flour
- 1½ Cups Sugar
- 1 Cup Margarine (1/2 lb) melted and cooled
- 4 Teaspoons Baking Powder
- 1 Tablespoon Vanilla
- Anise Seed
- ½ Lemon Rind and juice
Instructions
- Beat eggs
- Gradually add sugar
- Beat eggs until smooth (2 eggs at a time) with sugar
- Pour cooled melted margarine and vanilla
- Add flour and baking powder to egg mixture
- Dough will be sticky when done
- Preheat pizzelle iron
- Drop ½ to 1 teaspoon of dough on pizzelle iron to bake
