Beef Enchiladas

This was always one of my favorite Mexican dishes growing up. Kathy would always make these when we came over dinner. Then she figured out it was a great barter with me as well. "Hey Barry, can you come over and fix my computer? I'll make enchiladas for you!" Worked every time.
Ingredients
- 1 lb. Ground Round
- Sm. Onion, chopped
- Pkg. Taco Seasoning
- Refried Beans
- Tortillas
- Shredded Cheddar or Tex-Mex Cheese
- Can of Enchilada Sauce
Instructions
- Brown Ground Round with chopped onion.
- Drain.
- Add Taco Seasoning and a can of Re-fried Beans.
- Mix well.
- Spray baking dish with Pam.
- Place a scoop of meat mixture onto each Tortilla wrap and roll up, placing seam side down in baking dish.
- Continue until meat mixture is all used.
- Pour a can of Enchilada sauce over all.
- Cover well with Cheese.
- Bake at 350 degrees until Cheese is melted and heated through.
- Serve with chopped tomato, lettuce and sour cream.
