This was always one of my favorite Mexican dishes growing up. Kathy would always make these when we came over dinner. Then she figured out it was a great barter with me as well. "Hey Barry, can you come over and fix my computer? I'll make enchiladas for you!" Worked every time.
Ingredients
  • 1 lb. Ground Round
  • Sm. Onion, chopped
  • Pkg. Taco Seasoning
  • Refried Beans
  • Tortillas
  • Shredded Cheddar or Tex-Mex Cheese
  • Can of Enchilada Sauce
Instructions
  1. Brown Ground Round with chopped onion.
  2. Drain.
  3. Add Taco Seasoning and a can of Re-fried Beans.
  4. Mix well.
  5. Spray baking dish with Pam.
  6. Place a scoop of meat mixture onto each Tortilla wrap and roll up, placing seam side down in baking dish.
  7. Continue until meat mixture is all used.
  8. Pour a can of Enchilada sauce over all.
  9. Cover well with Cheese.
  10. Bake at 350 degrees until Cheese is melted and heated through.
  11. Serve with chopped tomato, lettuce and sour cream.
