This was always Stephen's dessert of choice
  • 2 C. sifted Flour
  • 2 C. Sugar, granulated
  • ½ C. Powdered Sugar
  • ⅓ C. Lemon Juice
  • 1 C. Butter
  • ¼ C. Flour
  • 4 Eggs, beaten
  • ½ tsp. Baking Powder
  1. Sift together the Flour and Powdered Sugar.
  2. Cut in softened Butter until the mixture clings together. (I do this with mixer on low speed.)
  3. Press into a 13 x 9 inch baking dish.
  4. Bake at 350 F for 20 min., or until browned.
  5. Beat together Eggs, Granulated Sugar, and Lemon Juice.
  6. Sift together ¼ C. Flour and Baking Powder.
  7. Stir in Egg mixture and pour over baked crust. (I add the dry ingredients into the egg mixture with the mixer.)
  8. Bake at 350 F for 25 min.
  9. Sprinkle with Powdered Sugar when done.
  10. Cool.
  11. Cut into squares.
  12. Refrigerate.
