Lemon Squares

This was always Stephen's dessert of choice
Ingredients
- 2 C. sifted Flour
- 2 C. Sugar, granulated
- ½ C. Powdered Sugar
- ⅓ C. Lemon Juice
- 1 C. Butter
- ¼ C. Flour
- 4 Eggs, beaten
- ½ tsp. Baking Powder
Instructions
- Sift together the Flour and Powdered Sugar.
- Cut in softened Butter until the mixture clings together. (I do this with mixer on low speed.)
- Press into a 13 x 9 inch baking dish.
- Bake at 350 F for 20 min., or until browned.
- Beat together Eggs, Granulated Sugar, and Lemon Juice.
- Sift together ¼ C. Flour and Baking Powder.
- Stir in Egg mixture and pour over baked crust. (I add the dry ingredients into the egg mixture with the mixer.)
- Bake at 350 F for 25 min.
- Sprinkle with Powdered Sugar when done.
- Cool.
- Cut into squares.
- Refrigerate.
