This is Dad's all time favorite cake.
Ingredients
  • Cake
  • 1 ½ C. Boiling Water
  • 1 C. Quick Cook Oats
  • 1 C. Brown Sugar
  • 1 C. Granulated Sugar
  • ½ C. Shortening
  • 1 ½ C Self Rising Flour
  • 1 tsp. Cinnamon
  • 2 Eggs
  • Frosting
  • 1 C. Brown Sugar
  • 1 stick butter (not margarine), melted in pan
  • ½ C. Pecans, chopped
  • ½ C. Coconut
  • ½ C. Canned Evaporated Milk
  • 1 tsp. Vanilla Ext.
Instructions
  1. Cake
  2. Pour boiling water over oats and let stand while mixing other ingredients
  3. Cream together with mixer Brown Sugar, Granulated Sugar and Shortening
  4. Add to that Self Rising Flower, Cinnamon and Eggs
  5. Beat well with mixer.
  6. Then, add oats and mix well.
  7. Pour into 13 x 9 pan sprayed with Pam.
  8. Bake at 350 F for 40 to 45 minutes or until toothpick inserted in center comes out clean.
  9. Frosting
  10. Bring to a boil while stirring well.
  11. Pour over top of cake still in pan right out of oven.
  12. Place cake under broiler in oven until lightly browned.
