Oatmeal Cake

This is Dad's all time favorite cake.
Ingredients
- Cake
- 1 ½ C. Boiling Water
- 1 C. Quick Cook Oats
- 1 C. Brown Sugar
- 1 C. Granulated Sugar
- ½ C. Shortening
- 1 ½ C Self Rising Flour
- 1 tsp. Cinnamon
- 2 Eggs
- Frosting
- 1 C. Brown Sugar
- 1 stick butter (not margarine), melted in pan
- ½ C. Pecans, chopped
- ½ C. Coconut
- ½ C. Canned Evaporated Milk
- 1 tsp. Vanilla Ext.
Instructions
- Cake
- Pour boiling water over oats and let stand while mixing other ingredients
- Cream together with mixer Brown Sugar, Granulated Sugar and Shortening
- Add to that Self Rising Flower, Cinnamon and Eggs
- Beat well with mixer.
- Then, add oats and mix well.
- Pour into 13 x 9 pan sprayed with Pam.
- Bake at 350 F for 40 to 45 minutes or until toothpick inserted in center comes out clean.
- Frosting
- Bring to a boil while stirring well.
- Pour over top of cake still in pan right out of oven.
- Place cake under broiler in oven until lightly browned.
