Blackberry Great Humor Ice Cream Cake

This amazing cake is what Logan surprised me with for my birthday dinner. WOW. It was amazing! It was inspired by the Good Humor Strawberry Shortcake ice cream bars. It was so much better, we deemed it Great Humor.
Ingredients
- Crust
- Package of Golden Oreos
- Half Stick of Butter
- Ice Cream Layer
- 1 Gallon Blackberry or Black Raspberry Ice Cream
- Sorbet
- 36 Oz Blackberries
- 9 Oz Sugar
- 1 Tbs Lemon Juice (Optional)
- Dash of Salt (Optional)
- Topping
- Micro Marshmallows (Optional)
Instructions
- Line 9x13 glass dish with parchment paper
- Crust
- Melt half stick of butter
- Slowly add cookies whole into blender/food processor
- Add butter once cookies crushed to uniform consistency and no chunks remaining
- Spread evenly in pan across parchment paper
- Sorbet
- Add all the berries to blender/food processor
- Blend until pureed
- Add sugar and blend until smooth
- Optionally add lemon juice and salt for enhanced flavor
- Pour sorbet thru strainer to remove seeds
- Freeze mixture until solid
- Churn in ice cream maker until desired consistency
- Assembly
- Set ice cream out to allow to soften(softer will allow the ice cream layer to level out evenly)
- Spread ice cream into ½" layer on the crust
- Place in freezer until frozen solid
- Remove from freezer
- Spread sorbet over the ice cream layer
- Place in freezer until frozen solid
- Set ice cream out to allow to soften(softer will allow the ice cream layer to level out evenly)
- Spread remaining ice cream into ½" layer on the top of sorbet(should reach the top of dish)
- Spread micro marshmallows evenly over the surface
- Place in freezer to firm up, until time to serve
- Remove 15 minutes prior to serving to allow to be cut easily.
