This is the brine recipe that David Underwood uses for making his famous Church Chicken for our outreach events. Don't forget to mix up your rub.
  • ½ to ⅔ Gallon of Water
  • ½ Cup Light Brown Sugar
  • ¼ Cup Kosher Salt
  • 2 Tbs Granulated Garlic
  • Ice
  1. Add water to stock pot
  2. Bring to low boil
  3. Add Brown Sugar, Kosher Salt and Granulated Garlic
  4. Mix until dissolved(Use immersion blender if you have one)
  5. Remove from heat
  6. Pour into container you will use to brine chicken
  7. Add ice to bring water back up to the 1 gallon mark
  8. Once water is chilled again, add chicken making sure it is fully covered
