Church Chicken Brine

This is the brine recipe that David Underwood uses for making his famous Church Chicken for our outreach events. Don't forget to mix up your rub.
Ingredients
- ½ to ⅔ Gallon of Water
- ½ Cup Light Brown Sugar
- ¼ Cup Kosher Salt
- 2 Tbs Granulated Garlic
- Ice
Instructions
- Add water to stock pot
- Bring to low boil
- Add Brown Sugar, Kosher Salt and Granulated Garlic
- Mix until dissolved(Use immersion blender if you have one)
- Remove from heat
- Pour into container you will use to brine chicken
- Add ice to bring water back up to the 1 gallon mark
- Once water is chilled again, add chicken making sure it is fully covered
